Taro leaf Rolls
Hello everyone. How are you
all? Today I want to share one of the famous local recipe of Himalayan region in the local language it is called “PATIDE” which is made up of Taro leaf, which is a beautiful
heart-shaped leaf.๐๐๐
Taro leaf consists of
fibre, various nutrients such as vitamin E and Vitamin C which is good for
health.
Taro leaf has an acrid flavour and
contains calcium oxalate which is toxic and it shouldn’t be taken without
boiling. After boiling the leaf, it tastes good and safe to eat.
For making taro leaf rolls
you need Taro leaves and batter to roll them into.

For the batter you need (depending
on how many leaves you are using).
1) Chickpea Flour
2) Ajwain( carom seed)
3) Turmeric
4) Red chilli powder
5) Coriander powder
6) Salt
7) Asafetida
8) Mango powder
Take all these above
mentioned ingredient in the bowl mix with water; make not so thick paste-like
we make the batter for the omelette.
Now take a taro leaf spread the batter all over on one side and fold it, make a roll of
it like shown above
Put rolls into a
steamer wait till they get soft, you can use a knife to check the softness of
the leaf. It usually takes
20 minutes to get soft.
Now cut the rolls of leaves
into little rolls.

Next step is to Shallow fry it for 5 to 10minutes on a non-stick pan or deep fry it.
I like it in
the traditional way, so I deep fry it.
Use oil-absorbing sheets to
take out extra oil.
The leaves will be crispy and so yummy to eat.
Serve with tomato or mint sauce.๐ฎ๐ฎ
